This cake instantly became my favorite just a couple of days ago, when I decided to make a surprise birthday cake for my daughter's tutor, Teacher Cristine. Just a simple Butter Cake with whipped cream and strawberries. It was unfortunate that there are no available fresh strawberries in the supermarket near me that time, that I had to use pie filling instead. But it surprised me, that it still turned out to be the kind of cake I would buy from famous bakeshops here in the Philippines, and better. </div>

The name Strawberry Shortcake doesn't really define this type of cake. Because originally, as how <a href="http://bakingbites.com/2009/09/what-is-a-shortcake/" target="_blank">Baking Bites</a> described it, Strawberry Shortcake is typically made with a biscuit-like cake or scone that is split and filled with strawberries and sweetened whipped cream. But for me, however you want to make it, I'm pretty sure it will taste just as amazing.<br />

I love how the cream complements the moist and light sweetness of the butter cake, as well as the strawberries that bursts in your mouth at first bite. This cake is oh so good, that I couldn't help myself and made another one the next day. </div>

The first fondant cake that I made was this Angry Birds Cake. It is for my friend Fleur's nephew Vince, who celebrated his birthday on the 2nd week of February. Only then that I realized, a cake looks better with everything edible. I'm going to have to work on my sculpting skills.<br />

Next is this Rio Cake that I made for a very pretty little girl named Aila. I met his Dad, Shaba, once in a business meeting and he was thrilled when I mentioned I've just started making fondant birthday cakes. They provided the toppers, so I had no problems with the decoration at all.<br />

As of today, I have a few cakes lined up for the month of October until December, from tiered cakes to customised. I am happy to have friends supporting me with this business venture, especially my Mom who helps me out with the designs, assembling and a lot more. It's funny coz when I get tired sometimes, I would say 'I don't want to do this anymore'. It's like I'm having a love and hate situation with my oven. I've always wanted to create the perfect chocolate cake my entire baking life. I've came across recipes of famous pastry chefs from different countries (from books) and little did I know that I would find it from one of our country's most popular and multi-awarded pastry chef, Chef Ernie Babaran.<br />

It's only now that I realize it just takes a little bit of faith and perspective to achieve one's dream, based on a feature I read about Chef Ernie's very inspiring story. His Fundamentals of Pastry Arts class is the one thing I look forward to the most every week. It's amazing how you can learn so many things in a short period of time. It's truly an honor to be in the same kitchen as he is.<br />

Devil's Food Cake is a moist, deep dark chocolate layer cake. Anyone with a chocolate addiction will surely be satisfied with its intense chocolate flavor. Of course, you're going to get it from the best brands of cocoa and chocolate compound. I used Valrhona with this cake and it was absolutely superb. There are also some ingredients I get to use for the first time and because of the awesomeness of this recipe, I'd sure still be making it in the future. <br />

Just recently, I also made my husband a birthday cake, unfortunately I wasn't able to take pictures because we don't have the camera at the moment. Baking for them makes me happy.<br />

A couple of weeks back, my sister Ella and I were planning about my niece's 1st birthday party over the phone. I was once again asked to make cupcakes and of course, I gladly took the job. Then I thought it's about time I explore the colorful world of cake decorating and make a 9 inch Chocolate Cake with Vanilla frosting. I was pretty scared at first but I went on and dominate the frosting.<br />

It was actually not that complicated. You just need the right tools and be focused. Take your time, don't rush. Feel confident that you'll get it done and relax. That's the main thing I learned in the process.<br />

I've been watching cake decorating videos on youtube for years and I can say it really helped me a lot. My wonderful husband also provided me with books of professional cake decorators where I discovered the dos and donts, and which flavor of frosting best matches with different flavors of cakes. My sister Ella gave me a turntable which is one the must-haves when it come to decorating cakes specially for the round ones. I know the cake isn't perfect, but I am happy that I was able to pipe pearl borders in a cake for the first time. The little black dots were supposed to look like mickey but unfortunately didn't turn out that way but I know I can do better next time.<br />

The cake and cupcake toppers were made by my sister. It was just simply googled, printed then taped in a toothpick and I can say it was real cute though my sister had a hard time cutting them.<br />

The fudge was absolutely amazing! The texture was good, a little too sweet I can say but all in all, it's the perfect go to dessert. The amount of butter really accentuated the bursting flavor of the peanut butter. I put in small paper cups and boxed it for my friends to share and they went nuts about it.<br />

The color themes were red and silver, so I did it with red frosting and just topped 40 pieces of the cuppies with metallic dragees for a silver touch. It was a hundred Chocolate Cupcakes with bride and groom candy topper.<br />

The wedding was just amazingly fabulous. It was thee wedding every bride would wish for. The bride Amor was glowing beautifully in her sparkly white dress, and Tyrone was just as perfect. My daughter Kursten was one of the flower girls and I can say the entourage's wardrobes were astonishing. The reception venue was gorgeous and the food was absolutely mind-blowing. Amor did a pretty good job in organizing everything.<br />

I got a huge order of assorted cupcakes from my uncle Romel on the first week of December. He was very specific about the cupcake designs that I'm terrified I might not be able to make it. Some of the frosting designs I made wasn't actually what we agreed about but he still loved it. Thank God! I was really exhausted in the process, but gladly fulfilled at the end of the day. It was fun doing business with him, considering I was only 3 or 4 the last time I saw him. It was like having a reunion and doing business at the same time. <br />

These are just the few works I had for the holiday season. All in all, I am grateful that KC's Cupcakes did so well for the year 2010. It was basically a refrigerated chocolate ganache, rounded and rolled on cocoa. I love it because it's incredibly easy to make, absolutely satisfying and, well, it's chocolate! what's not to love?! <br />

I made these cupcakes for a friend of my friend Lucille's grandmother's 62nd birthday celebration (a little confusing, yes). The color theme was red and silver so it was indeed a no brainer that metallic dragees are the perfect cupcake topping for it. It was my first time to use red frosting and I can say they look pretty fabulous. :D<br />

My blogging is kind of slow for the past weeks, not that I'm getting lazy or anything. I love blogging but it hit me, I want to work again. I'm planning to get a job next year, of course with my husband's approval (not sure if he's going to approve of it). I'm still going to bake and that's for sure. Actually my friend Laine and I came up with our business plan over a phone conversation. It just came up. I'm blessed to have a friend who knows everything and willing to help whatever it takes. I was thinking I could work while we're still planning our business coz I'm sure it's gonna take months of preparation for it.<br />
<br />
I'm turning 24 on the 21st of November. I don't know why but I'm excited. I don't really celebrate my birthday the traditional way. We just go to the movies, buy a couple of stuff (books to be specific), buy cupcakes at Cupcakes by Sonja and have a lovely dinner at my favorite restaurants. I love it that way and I wouldn't ask for a better gift.<br />
<br />
I'm happy to share that baking calendar for the month of December is full and I'm going to sure be spending a lot of time in the kitchen.<br />

It has been a wonderful year and I have a lot of things to be thankful for. You're going to sure see more of The Dough Puncher on December. I really missed my blog. The past weeks has been fun. We went to Laguna (the entire clan) in celebration of my grandfather's birthday and my incredible Aunt's visit here from Japan. We rented this huge house for a couple of days and we had a crazy yet extremely great time. We played a lot of games just like the good old days, not having to worry about anything but have fun. It's good to be silly every once in a while. You feel younger. :D<br />

After playfulness comes sickness. I've been sick for 3 days now. Still not getting any better. I felt the sudden urge to bake this morning. I really miss my oven. I'm missing a lot of things lately. I immediately grabbed my book 'The Ultimate Cookie Cookbook' by Better Homes and Gardens and browsed for another cookie recipe for my daughter Kursten. As much as I want to exert more effort in baking today, I still feel awful so I went for the simple Chock-full of Chips. <br />

The moment I saw 3 types of chocolate in the recipe, I instantly knew it was it and Kursten will surely love it. Semisweet chocolate chips, candy-coated milk chocolate pieces and white chocolate chips? What more could you possibly ask for. It's like dying and going to heaven.<br />

What I really love about this cookie is that it has a healthy twist in its own little way, considering wheat flakes and oats are best known for its fiber content. Burst of chocolatey goodness that will mindblowingly satisfy even the sweetest tooth. You get the amazing combination of crisp wheat flakes that complements the soft and chewy consistency of the cookie itself and gooey melted chocolate at first bite.<br />

Chock-Full of Chip<br />
Yields 48 cookies<br />
<br />
2 1/2 cups flour<br />
1 cup quick cooking oats<br />
1 cup wheat flakes<br />
1 tsp. baking powder<br />
1 tsp. baking soda<br />
1/4 tsp. salt<br />
1 cup butter, softened<br />
1 cup granulated sugar<br />
1 cup brown sugar<br />
2 eggs<br />
1 1/2 tsp. vanilla<br />
1 cup semisweet chocolate chips<br />
1/2 cup miniature candy coated milk chocolate pieces<br />
1/2 cup white chocolate chips<br />

Instructions:<br />
<ul><li>Preheat oven to 350F.</li>
<li>In a medium bowl, stir together flour, oats, cereal, baking powder. baking soda and salt. set aside.</li>
<li>In a very large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.</li>
<li>Add granulated sugar and brown sugar.</li>
<li>Beat until combined, scraping sides of the bowl occasionally.</li>
<li>Beat in eggs and vanilla until combined.</li>
<li>Beat in as much of the flour mixture as you can with the mixer. Stir in any remaining flour mixture. </li>
<li>Stir in the semisweet chocolate chips. candy-coated milk chocolate pieces and white chocolate chips. </li>
<li>Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. </li>
<li>Bake for 10 to 12 minutesor until golden brown.</li>
<li>Let stand for 1 minute on the cookie sheet.</li>
<li>Transfer to a wire rack; cool.</li>

It's been a rainy weekend and I can't think of a better way to spend it than have a warm and gooey Molten Chocolate Cake. I discovered it from my sister-in-law Alcee and it was ever since our 'go to' recipe when it comes to dessert. I even used to sell it back in my previous company (PostManila) and it's always been the main event of the evening. I made these babies originally for my husband's colleagues, I just snatched a couple of pieces for our dinner dessert. It goes perfectly with a dollop of cream or vanilla ice-cream. <br />

It is one of my favorite chocolate bars ever since I was little. I remember every time a relative comes home from the States, they give us this huge bag of assorted chocolate bars, unfortunately my sister and I had to share it with our cousins from upstairs and the next day early morning, my sister Ella would be the first one to get Snickers and take it to school, so I always end up having Milkyway or Butterfingers instead (a sad memory of my childhood). :D<br />

This morning, while I was thinking of something better to do with my friend/regular customer Lucille's cupcakes (as a thank you gift coz she ordered 3 dozen Banana Cake with Vanilla Frosting and candy toppers for a friend's birthday. see next post.), I suddenly craved for Snickers and then I thought, Lucille will flip if she see some chopped Snickers on her cupcakes. Who wouldn't? So I went on with the plan and she did flipped when she saw the cupcakes.<br />
<br />
I used it with Banana Cake and I honestly think it went well with Snickers. It kind of gave me the impression of Banana Split. And to make it even more heavenly, I drizzled it with Chocolate Ganache made with Vanhouten chocolate chips. Snickers is usually paired with chocolate cake but I find it a little redundant in chocolate so I thought I'd give it a little twist.<br />

So when my good friend Hanzel called to place an order last weekend, I was brought back to life. I can proudly say that baking is my addiction. Well, I know this can be hard to believe but I don't really eat what I bake, so it is the baking process that I'm addicted to (a little defensive I know, but it is true).<br />

Hanz ordered a dozen Butter Cake with Chocolate Frosting and Chocolate Cake with Vanilla Frosting. My husband's colleagues also ordered 2 dozen of Chocolate Cake with Vanilla Frosting and then, I was instantly back in business.<br />

Hanzel is one of the 'few but true' friends that I have. We used to work together back in PostManila. One of my unforgettable moments with her was last year, it was her first day (I think) at work and we still barely know each other, I was having a rough day at work then I received a text message from her, saying "I'm just here if you need someone to talk to..". And that was the beginning of our friendship. She's a strong woman that even Brock Lesnar won't be able to take her down. <br />

I drizzled the Chocolate Cupcakes with Ganache for a change. I always try my best to come up with something different every time. Hanz told me on facebook that her colleagues loved the cupcakes. It was a huge surprise when my old friend Melody called me this afternoon going crazy about wanting to learn how to bake and just the perfect timing, I'm alone for the weekend coz Kursten is at my Mom's house and husband is at work, she came over right away to pick me up. She just got married and being the typical stepford wife that I am (not really), I agreed to teach her some of the few tricks I know about baking. After a long discussion of what we are going to bake, we finally agreed to make her and her husband's favorite <a href="http://kcbakes.blogspot.com/2010/09/goin-bananas.html">Banana Muffins</a>. We used my version of the recipe except less sweet so we reduced the amount of sugar by 4 tablespoons.<br />

We went to Fort Bonifacio first to buy her mom Tamales but when we got there, they ran out. So Mel bought her mom sweet meats instead (we call it 'kakanin' here in the Philippines. not sure if it's the right English term). Of course, like what I've mentioned in my earlier post, I always go to Cupcakes by Sonja every time I visit Serendra and since Melody unbelievably haven't been there before. She was like a little girl in the candy store when we stepped inside Cupcakes by Sonja and just as amazed when she took her first bite on her Chocolate Mint Cupcake. Taking her to that cupcake store turned out to be a pretty good idea coz she told me she's not a big fan before, but she is now. She said she'll definitely come back for more.<br />

In preparation for our friend Tyrone's movie/cinema themed wedding, my husband came up with a brilliant idea of making Popcorn Cupcakes instead of ordinary frosted cupcakes that the bride Amor and I agreed about and they both liked it. So last night, we made a few samples to see if it's going to work out and as it looked like, it did. I plan to do Butter Cupcakes to match with the Butter Popcorn image and my husband will be doing the Popcorn container out of creativity. It's great to have an artistic husband around, less trouble and easy work. I've been wanting to try making this cake ever since I saw it in an episode of Cake Boss (Reality Show of the famous Carlo's Bakery in New Jersey), where most people says they have the most exquisite Crumb Cake you'll ever have. I know I'm not a pro, but I'm just going to share my viewpoint of the recipe. I honestly didn't get the taste I was expecting. The cake was dry, dense and bland. I was absolutely sure I followed the recipe perfectly and I even bought the best ingredients because I had such high expectation that it's going to turn out superb. Or maybe that's how it should really taste but it's just not my type of cake. I really want to want this but I really don't. But like I said, this is just my viewpoint of the recipe. We all have different standards for food. <br />

We celebrated our friend Fleur's birthday at Cuba Bar Shaw Boulevard last Sunday. I gave her Chocolate Cupcakes as a gift and even though it didn't turn out the way I wanted it to look like, she still loved it. My husband helped with the decorations not to mention his famous 'flourish design' using royal icing. It felt great doing stuff together especially when it comes to baking which is not his thing.<br />

I first met this wonderful friend of mine in Colliers International at Makati City, where we both used to work in 2006 and we became close friends ever since. We hung out when I was still pregnant with Kursten and I can say she was the one that made me enjoy my pregnancy. It's funny because we always have our houses near each other by accident. <br />

The party was great. I've never had so much fun for a very long time. We played billiards and we hit the karaoke. I was the photographer for the night (I don't mean to brag but I take pretty awesome pictures). I did a lot of catching up with our friend Laine coz it's been years since we last saw each other so I asked her to just stay at our place for the night. I met Fleur's family and friends and I was so happy I got new friends. The food was good, the place was stunning. The party was fabulous!<br />

It's sad that I'm not going to be able to see her often from now on, because she already resigned from work to take care of her Dad and she's going back home to Batangas soon. She always puts her family first and it is the best thing I love about her. I'm really going to miss her. She lives just a few blocks away from our place and I could visit her anytime I want, but now it will take 3 to 4 hours of trip to see her. </div>It was my niece Bianca's birthday party yesterday (though it kind of looked like it was my Mom's) and I was assigned for the cupcakes. It wasn't really a very pleasant day for me because we got stuck in traffic on our way to the mall (we first bought Bianca a gift before going to the party) and it was burning hot despite of the rain. I was melting the entire time and I have no choice but to endure it. All I wanted was to make my niece happy so despite the humid weather, we still did our job and kept the party going. We bought the Barbie bag that Bianca wished for. The Purple and Pink cupcakes that I made was so simple and cute, yet it still turned out to be a crowd pleaser. <br />

The first thing I love about baking cupcakes is the frosting part. I get to play with different colors of frostings and sprinkles which is a lot of fun. It's like 1st grade all over again. </div><div style="text-align: left;"><br />

A couple of weeks back, we went to my brother-in-law's music video shoot (Nikki Gil's video) in a studio near Robinsons Pioneer at Boni Avenue. The studio was so cool and it kind of look like an art gallery from outside. They have a classy small cafeteria in case anyone gets hungry during the shoot. While everybody's busy around me, something caught my attention. It was this good looking Banana Muffins displayed at the corner of the bar. It looks really attractive that I forcefully asked my husband to buy me some, ignoring the "you're on a diet!" look on his face. It was just as good as how it looks. Fantastic!<br />

I still had the banana muffin fever the next day so I thought, why not make them myself? I browsed my favorite websites for recipe and went straight to the grocery store to buy bananas, since I already have the basic ingredients at home. I substituted some of the ingredients to what I think will make the muffins outstanding. No picture this time because Mom borrowed our camera that entire week. <br />

<b>Banana Chocolate Chunk Muffins</b><br />
<b>Serves</b> 20 to 24 muffins<br />
<br />
Ingredients:<br />
<br />
1 3/4 cups all-purpose flour<br />
3/4 cup brown sugar<br />
1 teaspoon baking powder<br />
1 teaspoon baking soda<br />
1/4 teaspoon salt<br />
1 large egg<br />
1/2 cup butter (melted)<br />
1/2 cup plain yogurt<br />
1 teaspoon vanilla extract<br />
1 cup mashed ripe bananas<br />
3/4 cup bittersweet chocolate bar (coarsely chopped) <br />

Instructions:<br />
<ul><li>In a large bowl, combine the flour, brown sugar, baking powder, baking soda and salt. </li>
<li>In another bowl, combine the egg, butter, yogurt and vanilla.</li>
<li> Stir into dry ingredients just until moistened. </li>
<li>Fold in bananas and chocolate chunks.</li>
<li>Fill greased or paper-lined muffin pan two-thirds full. </li>
<li>Bake at 350 degrees F for 22-25 minutes until golden brown or toothpick inserted comes out clean.</li>
<li> Cool for 5 minutes before removing from pans to wire racks. </li>
</ul><br />
I substituted brown sugar instead of white sugar, butter instead of vegetable oil (muffins turned out moist, still) for more flavor and bittersweet chocolate chunks instead of semisweet chocolate chips. It was awesome! I know we all have our own standards for food, but I can say this is one of the best recipes I've ever tried. :D<br />

I tried this cheesecake recipe courtesy of my sister-in-law Alcee's Oreo Recipes Cookbook back in 2007. It's for my husband actually (as I've mentioned in my earlier post, I don't eat cheese..). I brought a few slices at work for them to try. My former Boss Dave Hukom said the gelatin was over powering so I took the liberty of changing the recipe a little bit. I don't have a nice camera that time and I refuse to use my camera phone because of poor quality so I just downloaded a photo from DeviantArt. I'm sure it's going to be awesome. :D<br />

<li>In a small saucer, heat milk and gelatin in microwave oven for 15 seconds or until melted. </li>

<li>Gently fold in whipping cream and chopped cookies. </li>
<li>Spoon over crust. </li>
<li>Refrigerate for 2 hours or until firm.</li>
